What is Japanese sake?

Japanese sake is a traditional alcoholic beverage of Japan made from rice, water, and koji. With its wide range of aromas and flavors, it can be enjoyed either chilled or warmed.
 
The sake you can enjoy on the “Japanese sake tasting experience at brewery with a Private driver” is brewed using abundant spring water from the Tanzawa mountain range, recognized as one of Japan’s Three Famous Waters.
 
As a way to experience Japanese culture during your travels, we invite you to try a glass and enjoy it casually.


1.Ishii Jozo (Sake Brewery) 

Recommended Sake Selections:Soga Bairin Umeshu (Plum Wine)

This umeshu (plum wine) is made using green plums of the Shirakaga variety harvested from the Soga Plum Grove in Odawara, and is brewed with the brewery’s own sake, “Soga no Homare.”
Enjoy its smooth, rich, and full-bodied flavor.

2.Inoue Shuzo (Sake Brewery)

Since its founding in 1789, the brewery has been crafting sake under the cool climate of Hakone,
using brewing water drawn from its own well and high-quality sake rice.

3. Nakazawa Shuzo (Sake Brewery)

Recommended Sake Selections:Matsumidori Junmai Ginjo S.tokyo

This sake is brewed using yeast discovered in the Meiji era and recognized as the second-oldest in the world.
It is loved for its refreshing, fruit-like sweetness and smooth mouthfeel.

4. Kawanishiya Shuzo  (Sake Brewery)

In the Ashigara area, the brewery follows the motto “The finest junmai sake made from the finest sake rice,” crafting food-accompanying sake brewed entirely as 100% junmai.
“Ryu Yamabuki Label” is a daiginjo sake made from Hyogo-grown Yamada Nishiki polished to 45%, offering a well-balanced harmony of richness and refined aroma.

5.Kikkawa Jozo (Sake Brewery)

Since its founding in 1912, the brewery has continued sake production in Isehara City, Kanagawa Prefecture.
Rising behind the brewery, Tanzawa–Oyama has long been revered as an object of rain-prayer worship and is also affectionately known as “Afuri-yama.”
Groundwater filtered over many years through the mountain’s geological layers results in rare hard water with a hardness level of 150 to 160, which is uncommon in Japan.
We draw this pristine water from three wells located on the brewery grounds, making it the cornerstone of our sake brewing.
 
By crafting sake with a low polishing ratio that lets the vitality of the rice shine through, and by blending traditional moto (yeast starter) methods with modern techniques,
we continue to explore new possibilities for Japanese sake beyond conventional boundaries.

6.Kanai Shuzo (Sake Brewery)

This Junmai Ginjo is brewed using medium-hard spring water from the Tanzawa area.
While offering a fragrant aroma, it aims to showcase a distinctive clean and refreshing finish unique to medium-hard water.

7.Oya Takashi Shuzo  (Sake Brewery)  

Recommended Sake Selections:Zarusou Hourai Junmai Ginjo

This is a versatile all-rounder that can be enjoyed across the full range of serving temperatures, from chilled to warmly heated.

8.Koganei Shuzo (Sake Brewery) 

Recommended Sake Selections:Sakakarimasu Junmai Daiginjo

Brewed using underground spring water flowing from the eastern Tanzawa mountain range, this sake features a soft mouthfeel and a clean, crisp finish.
The craftsmanship of a veteran toji selected as one of Kanagawa’s master artisans truly shines.
 
Masakari Junmai Daiginjo is a sake that proudly earned the title of Champion of the Junmai Daiginjo category at the 2025 SAKE COMPETITION.
With fruity ginjo aromas, a well-balanced harmony of gentle sweetness and umami,its elegant character makes it a refined sake perfect for special occasions.

9.Shimizu Shuzo (Sake Brewery) 

Recommended Sake Selections:Iwao no Izumi Junmai Ginjo

This sake is made exclusively from polished rice with a polishing ratio of 60% or less, rice koji, and water.
Within its well-defined structure, it features gentle umami and sweetness derived from rice koji.

10.Kubota Shuzo (Sake Brewery)

Recommended Sake Selections:Sagaminada Junmai Daiginjo

Sagaminada brews its sake with the goal of creating “a well-balanced sake for pairing with food that brings out the natural umami of rice.”
While the brewing process is based on traditional ginjo techniques, the ginjo aroma is kept gentle and natural,allowing the focus to remain on balance and the inherent umami of the rice.
 
By honoring the rich history of the brewery while continually striving for a higher level of quality,Sagaminada aspires to be a sake brewery for the next generation.

11.Izumibashi Shuzo (Sake Brewery)

Recommended Sake Selections:Tonbo Label Rakufumai Junmai Daiginjo 35% Kimoto-Made

Guided by the belief that “sake brewing begins with rice cultivation,” the brewery produces sake using rice grown in its own fields and nearby areas.
With a vibrant aroma and a well-balanced harmony of sweetness and acidity, it offers a complex and full-bodied flavor characteristic of kimoto-style brewing.

12.Kumazawa Shuzo  (Sake Brewery)

Founded in 1872, this is the only remaining brewery in the Shonan area.
The name “Tensei” comes from the phrase “Uka Tensei Unpa Sho,” a classical Chinese expression meaning “when the rain passes, the sky clears.”
Inspired by the legendary “Uka Tensei” celadon, the brewery dedicates itself to crafting sake that embodies a crisp, refreshing clarity and a finish full of gentle moisture and elegance.
